Tamina (الطمينة) is a simple Algerian dessert mainly made of semolina. Tamina is usually served during celebrations such as engagement parties, weddings, baby showers or Mawlid.

Ingredients

  • 500g of semolina (medium)
  • 250g of melted butter
  • 250g of honey
  • 1tbsp of orange blossom water (mazhar)
  • Ground cinnamon (for decoration)
  • Dragées or almonds (for final decoration)

Procedure

  1. toast the semolina in a frying pan or in a cast iron dish, until it takes on a nice golden color, let it COMPLETELY cool down on the side.
  2. melt the butter and honey in a saucepan and flavor with orange blossom water.
  3. gradually add the well-cooled semolina while mixing.
  4. cook for 3 to 5 minutes while stirring to incorporate the mixture to the semolina.
  5. pour the tamina on a plate without waiting too long and even out the surface.
  6. sprinkle with cinnamon and garnish with almonds or dragées.
  7. let cool and serve.
