common lime

Limes are sour green citrus fruit. Limes may be substituted for lemons, and lime juice for lemon juice. The outermost surface contains flavorful oils that may be scraped off with a zester, serrated knife, or grater. As with other citrus fruit, slices are often used to decorate drinks.

The common Persian lime or Tahitian lime is a relatively small and thin-skinned citrus fruit. The Bearss variety, a type of Tahitian lime, is seedless and a bit smaller than the Persian variety. The Key lime, also known as the Mexican lime or bartender's lime, is much smaller and has an even thinner skin.
