Ingredients
- 1½ cups ricotta or cottage cheese
- ¾ cup Parmigiano Reggiano, freshly grated
- 2 tsp. onion, finely chopped
- 1 egg
- 1½ tsp. salt
Procedure
- Stir all the ingredients together in a bowl.
- Set aside while you roll the dough.
