Ingredients

  • Double batch basic polenta
  • 6 Boneless pork chops, 4 cm thick, approx 1 kg total
  • 1 28 oz can of tomatoes, preferably "fire roasted" or similar
  • 1 large carrot, peeled
  • 1 medium onion, peeled
  • 15 mL Olive Oil
  • 15 mL butter
  • 4 cloves garlic, peeled

Equipment

  • Stove
  • Knife, cutting board
  • Large sauté pan
  • Blender (a potato masher will work, and a stick blender would be perfect)
  • Meat thermometer

Procedure

  1. Slice onion into 1 cm half-rings. Start Polenta.
  2. Once the polenta is stable, sweat onions with olive oil and butter.
  3. When onions are translucent, clear spaces for the six pork chops, and put the pork chops into these spaces.
  4. Lightly brown the pork chops on both sides, remove from pan and set aside. Allow fond to develop slightly, then deglaze with 1/4 of the tomatoes.
  5. Grind the rest of the tomatoes, along with the garlic, in a blender until garlic a rough paste is formed. Then, add to the onion mixture.
  6. Turn heat to high, and allow sauce to simmer and darken slightly in color. When this occurs, turn heat to low.
  7. Finely chop the carrot and stir it in, then nestle the pork chops into the sauce and allow to simmer until the pork chops are done to your liking, about 20 minutes or so.
  8. Serve as soon as possible. To serve, spoon polenta on to plates or bowls and place pork chop and sauce on top.
