  1. Place the peas in two or three times their volume of water, along with the baking soda, which speeds the soaking process.
  2. Leave to soak overnight.
  3. The next day, drain the peas, and place in a saucepan with enough water to just cover them.
  4. Add the sugar.
  5. Bring to the boil and simmer for about 20 minutes, stirring occasionally to help break up the peas.
  6. Add water or reduce to the desired consistency.
  7. Season to taste with salt and pepper.
