Mondongo is a very hearty tripe stew in a spicy red base, served with lime wedges and chopped onions. Usually available Saturday mornings in Dominican restaurants, especially recommended for hangover. Related to the Mexican tripe stew, Menudo, in recipe, name, Saturday availability, presentation (beside limes and onions, Menudo comes with the addition of corn tortillas), and reputed therapeutic value.
