Aji amarillo peppers are a variety of chili pepper commonly used in Peruvian cooking. Aji amarillo peppers have a distinct, somewhat fruity taste and are considered moderately hot, registering around 40-50,000 units on the Scoville scale.
Although aji amarillo is Spanish for "yellow pepper," they may vary in color from yellow to orange as the seed pod matures.
Aji amarillo peppers may be purchased fresh, frozen, or as a puree.
